Job Description

• Responsible for the recommendation and sales of wines and other beverages to guests. Offering and promote the digestives.
• Carry out wine education classes.
• Train front of house about wine / wine matching. Make sure all service staff knows which wines to recommend to each dish of the menu.
• Carry out monthly stock control, inventory. Update continuously all stock forms.
• Support Restaurant and Bar Manager to maintain and update Wine and all other beverage lists. Ensure wines off critical age get sold. Establish Sommelier recommendation. Check pricing is up to date.
• Co-ordinate the work of subordinates and maintains the established procedures and policies.
• Promote good working atmosphere with emphasis in enhancing relations with subordinates.
• Communicate with guests, handle comments and problems whenever required
• Promote sales to meet forecasted revenues.
• Converse with guests to maintain a good relationship as well as extending personal touch.
• Make requisition for supplies in order to maintain stock level.
• Take over the duties of the Bar Manager in his absence.
• Be responsible for all Spoilage and Sleepers
• Carry out any other duties as and when required by the Director F&B.
• Experience in all aspects of food & beverage operations and modern management principles.
• Must have experience in food & beverage operations for at least 3-5 years.
• Ability to communicate with all levels of staff, supervise and motivate employees.
• Provide dynamic services to ensure guests are “wowed” by Rosewood Baha Mar’s hospitality
• Ensure proper set-up of the wine cellars, stocking, and delivery to service.
• Presenting and serving the requested wine following the correct wine service standards
• Make sure wine menus are updated with correct orthography and vintages.
• Maintain wine cellars accommodated, filled and organized
• Ensure all areas are clean and tidy, scraping dishes, polishing glasses and silverware, sweeping, stocking and more
• Answer all questions and resolve any guest complaints in a timely, friendly and professional manner
• Uphold the highest standards of courtesy and conduct exceeding expectations
• Immediately report any security, maintenance, housekeeping issues to management
• Ensure total compliance with Rosewood Baha Mar’s standards of operation
• Stay current on hospitality best practices and industry trends
