A Day in the Life

As a Demi Chef de Partie at Rosewood Amsterdam, your day begins with preparing your station for seamless service. From washing, peeling, and cutting fresh ingredients to creating flavorful dishes, you’ll ensure that every item meets Rosewood’s exceptional standards. You’ll collaborate with the team to manage buffet setups, maintain inventory, and document HACCP checklists. Throughout the day, you’ll play an integral role in delivering exquisite dining experiences, whether carving cooked meats, replenishing buffets, or assisting with quality control. By the end of your shift, you’ll take pride in having contributed to the success of the kitchen and creating memorable meals for our guests.

Job Summary

The Demi Chef de Partie assists in the kitchen’s daily operations, preparing, seasoning, and presenting dishes with precision and care. This role requires responsibility, independence, and collaboration in ensuring food quality and supporting the success of the outlets and events while adhering to Rosewood’s high standards.

Key Responsibilities

Guest Experience:

• Provide courteous and professional service to all guests and colleagues.
• Handle inquiries efficiently, ensuring prompt follow-ups for complaints or unresolved issues.
• Maintain positive guest and colleague interactions to foster strong relationships.

Operational Excellence:

• Prepare ingredients such as vegetables, meats, poultry, and seafood by washing, cutting, and grinding.
• Cook and present dishes using appropriate techniques, ensuring consistent quality.
• Assist with quality control of all food items and set up buffet presentations.
• Document HACCP checklists for storage areas and monitor food safety standards.
• Independently manage assigned kitchen areas, including breakfast buffet service, in the absence of the Chef de Partie.
• Support inventory processes and monitor the flow of goods, collaborating with the Purchasing Supervisor.
• Maintain cleanliness and order in assigned stations and work areas, ensuring hygiene and safety standards are met.

Collaboration and Communication:

• Work closely with other associates in a supportive and flexible manner to achieve team goals.
• Participate in daily departmental meetings, sharing updates and needs with the next shift.
• Communicate effectively with the culinary team to ensure smooth operations.

Standards and Compliance:

• Follow all Rosewood policies, including those outlined in the Associate Handbook and Confidentiality Code of Conduct.
• Abide by health and safety regulations, maintaining hygiene and sanitation standards.
• Represent Rosewood’s brand integrity by modeling the company’s culture, vision, and core values.

Skills & Qualifications

Experience:

• Culinary education preferred, with school internships as a plus.
• 12-24 months of culinary experience in luxury hotels or freestanding restaurants.

Skills:

• Basic culinary knowledge and proficiency in food preparation techniques.
• Strong organizational skills and attention to detail.
• Familiarity with HACCP standards and food safety protocols.
