OVERVIEW
The Director of Food & Beverage at Rosewood AMAALA is responsible for the strategic leadership, concept execution, and day-to-day operation of all Food & Beverage outlets, culinary experiences, bars, lounges, in-room dining, banqueting, and special dining activations across the resort.
This role ensures the delivery of exceptional, differentiated, and culturally resonant dining experiences aligned with Rosewood’s A Sense of Place® philosophy, AMAALA’s destination vision, and the highest standards of luxury hospitality.
KEY RESPONSIBILITIES
- Lead the pre-opening planning, setup, and launch of all Food & Beverage outlets and dining concepts at Rosewood AMAALA.
- Develop and execute the F&B strategy aligned with Rosewood brand standards, AMAALA’s vision, and business objectives.
- Partner with Culinary leadership to bring distinctive, destination-led dining concepts to life.
- Ensure each outlet delivers a unique, memorable, and emotionally engaging guest experience.
- Embed A Sense of Place® through menu design, service rituals, storytelling, and ambiance.
- Curate innovative dining activations, pop-ups, collaborations, and experiential offerings.
- Oversee daily operations of all restaurants, bars, lounges, banquets, and in-room dining.
- Ensure consistent service excellence, quality standards, cleanliness, and compliance across all outlets.
- Monitor guest feedback and satisfaction metrics; implement corrective actions as required.
- Drive revenue, profitability, and cost control across all F&B operations.
- Prepare and manage annual budgets, forecasts, and strategic financial plans.
- Monitor food, beverage, labor costs, and productivity to achieve financial targets.
- Identify revenue-generating opportunities and optimize outlet performance.
- Lead, inspire, and develop the Food & Beverage leadership team.
- Build a high-performance, guest-centric culture aligned with Rosewood values.
- Support succession planning, talent development, and leadership pipelines within Food & Beverage.
- Work closely with Culinary, Rooms, Wellness, Finance, Talent & Culture, and Sales & Marketing teams.
- Partner with local producers, artisans, and suppliers to support sustainability and authenticity.
- Represent Food & Beverage in Executive Committee discussions and strategic planning.
- Drive sustainable dining practices, including responsible sourcing, waste reduction, and ethical partnerships.
- Support AMAALA’s sustainability and environmental commitments through Food & Beverage initiatives.
QUALIFICATIONS & EXPERIENCE
- Minimum 10–15 years of progressive experience in Food & Beverage operations within luxury or ultra-luxury hotels or resorts.
- At least 5 years in a senior leadership role, preferably within a large resort or pre-opening environment.
- Bachelor’s degree in Hospitality Management, Business Administration, or related field.
