We are seeking a skilled Chef de Partie to join our team on the night shift (10 PM – 6 AM), supporting our In-Room Dining operations. In this role, you will oversee food preparation and ensure the highest standards of quality and presentation for our guests throughout the night. Job Summary
The Chef de Partie is a vital member of the culinary team, responsible for running a designated kitchen section and contributing to the success of Rosewood Amsterdam’s outlets and events. This role involves preparing high-quality dishes, maintaining operational excellence, mentoring junior team members, and ensuring compliance with Rosewood’s culinary and financial goals.
Key Responsibilities
Guest Experience:
- Deliver courteous and professional service at all times.
- Handle guest and internal customer requests efficiently, ensuring satisfaction.
- Maintain positive guest and colleague interactions, fostering strong relationships.
- Collaborate on the creation of innovative dishes and Standard Operating Procedures (SOPs).
Operational Excellence:
- Organize and manage your assigned kitchen section to maximize efficiency and productivity.
- Prepare dishes consistently and in line with established recipes and standards.
- Assist in menu planning, considering seasonal ingredients and guest preferences.
- Monitor food and operating costs, minimizing waste and optimizing resources.
- Conduct monthly inventories to maintain accurate stock levels.
- Ensure sanitation and hygiene standards are met, adhering to HACCP regulations.
- Maintain and care for kitchen equipment, reporting any issues promptly.
Collaboration and Communication:
- Support other kitchen sections as required by the Sous Chef or Chef de Cuisine.
- Communicate effectively with team members to ensure smooth service operations.
- Train and mentor junior associates, sharing skills and culinary knowledge.
Standards and Compliance:
- Participate in daily departmental meetings, providing updates and feedback.
- Follow all company and local regulations, including fire, hazard safety, and security protocols.
- Ensure associates maintain a professional appearance and meet Rosewood’s grooming standards.
Talent & Culture:
- Develop the skills and effectiveness of the culinary team through coaching and mentoring.
- Model Rosewood’s Values and Culture Characteristics, promoting teamwork and excellence.
- Ensure associates adhere to all hotel and departmental rules and policies.
Skills & Qualifications
Experience:
- Culinary education is preferred, with certification as required by local law.
- 3-5 years of experience in luxury hotels or high-end freestanding restaurants.
Skills:
- Strong knowledge of culinary techniques, kitchen operations, and menu development.
- Ability to manage multiple tasks efficiently and maintain composure under pressure.
- Proficiency in inventory management and cost control.
