ESSENTIAL DUTIES AND RESPONSIBILITIES

  • Provide visionary culinary leadership for HENRY, delivering an exceptional dining experience that reflects the outlet’s concept, quality standards, and brand positioning;
  • Curate and evolve innovative, market‑driven menus featuring fresh, locally sourced ingredients, with a focus on seasonality, creativity, and consistency;
  • Oversee all kitchen operations, ensuring impeccable food quality, presentation, and à la minute execution at all times;
  • Drive strong financial performance through effective cost control, menu engineering, productivity optimization, and efficient use of resources;
  • Lead, mentor, and inspire the culinary team through hands‑on management, structured training, and performance development;
  • Uphold the highest standards of hygiene, sanitation, food safety, and workplace safety in full compliance with hotel, brand, and regulatory requirements;
  • Collaborate closely with Culinary, Food & Beverage, and Hotel leadership to support revenue growth, marketing initiatives, and guest satisfaction objectives;
  • Foster a culture of professionalism, creativity, and excellence, aligned with Rosewood values and service philosophy.


REQUIREMENTS

  • Proven experience as Head Chef or Senior Sous Chef in a modern grill, premium steakhouse or fire‑led restaurant;
  • Strong expertise in open‑fire and charcoal cooking across meats, seafood and seasonal vegetables;
  • Deep understanding of beef sourcing, dry‑ageing, butchery and yield control;
  • Ability to deliver ingredient‑led, disciplined menus that transcend the classic steakhouse format;
  • Confident, calm leader with a strong track record in training and retaining high‑performing kitchen teams;
  • Commercially astute with solid control of food cost, GP and operational consistency;
  • Comfortable operating in an open‑kitchen, high‑volume luxury environment;
  • International experience is essential; Asian exposure is a plus;
  • As a part of the interview process, food tasting is a must.
