Rosewood Miramar Beach, a Rosewood Hotel, is looking for a Cafeteria Chef. The Cafeteria Chef is responsible for providing the best Experience to our associates with the support of the Executive Chef and Culinary Team, and assuring quality of food and presentation. Duties of this position include but are not limited to maintaining control of the food quality in the associate cafeteria and to follow all processes in place. The Cafeteria Chef must possess the ability to learn, can multitask, and complete projects in a timely manner. They should demonstrate exceptional customer service and problem solving skills. Organizational and communication skills are essential attributes for this position as well as the ability to focus on the customer and adapt to changes while maintaining quality and a good productivity

Essential Duties and Responsibilities:
  • Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
  • Prepare and distribute assignments for Culinary staff and review priorities. 
  • Check supply levels in storage closets, complete requisitions for additional supplies needed and submit to the Executive Chef. 
  • Check workstations for proper supplies, organization, cleanliness and mechanical problems. Instruct designated personnel to rectify any deficiencies. 
  • Oversees the planning and preparation of all meals and ensures that meals are healthy and appetizing.
  • Be a good steward of the resources provided to ensure adequate serving amounts for all employees while minimizing overages.
  • Responsible for cafeteria housekeeping and maintenance.
  • Optimize and maintain foodstuff and material inventories to meet all cafeteria needs.
  • Health and sanitation code requirements must be met at all times.
  • Develop and implement strategies for the Cafeteria that are aligned with the hotel’s F&B objectives.
  • Create a good working atmosphere for associates through communication skills and reinforcement.
  • Check, tour and inspect all stations, kitchens and back-of-the-house (BOH) areas when arriving and before leaving.
  • Check the schedule to make sure Cafeteria associates are here and on time.
  • Assist in any Back of House area when needed.
  • Do inventory counts whenever needed and maintain par level of stock.

It is vital that all such information remains confidential and must not be disclosed to anyone outside the company, guests and associates, unless otherwise stated.

General Skills: Must be able to perform job functions with attention to detail, speed and accuracy; prioritize, organize and follow-up; be a clear thinker, remaining calm and resolving problems using good judgment; follow directions thoroughly; understand a guest’s service needs; work cohesively with co-workers as part of a team; work with minimal supervision; maintain confidentiality of guest information and pertinent hotel data.

Technical Skills: Knowledge of various food styles (i.e., Mexican, Italian, French, Asian, etc.); ability to satisfactorily communicate in English with management and co-workers to their understanding; ability to compute basic mathematical calculations; familiarity with food and beverage cost controls; familiarity with point of sale systems.

Language: Required to speak, read and write English, with fluency in other languages preferred.

Physical Requirements:

  • Must be able to exert physical effort in transporting 20 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding. 
  • Kitchen Environment: constantly exposed to heat, high cold, slippery surfaces and appliances such as stove, oven, dishwasher, cooking top, as well as housekeeping and cleaning tools.
Qualifications:

  • Diploma/Some College or an equivalent combination of education and work-related experience.
  • Must have current and valid ServSafe Food Protection Manager Certification.
Experience:

  • Minimum 2 years Supervisory experience in kitchen operations and in food service.
  • Hotel operational exposure (i.e. Culinary) is preferred.
  • Experience with a luxury or ultra-luxury property or brand is preferred.

The salary range for this position is $68,000 to $70,000. This is the pay range for this position that the Hotel reasonably expects to pay. This position also may be eligible for bonuses. Decisions regarding individual salaries will be based on a number of factors, such as experience, type of hotel experience, location, and education.
