About the Role
Assist the Executive Pastry Chef to manage the efficient running of the Pastry and Bakery kitchen and is responsible for all pastry and bakery products and room amenities served to guests and associates whether produced in house or outsourced. ensuring the highest standards of food quality, presentation, and service, while managing a team of culinary professionals. Work closely with other departments contributing to the overall hotel success reflecting Rosewood Hotels and Resort Sense of Place philosophy and commitment to excellence and innovation.
Key Responsibilities
- Develop and implement culinary standards that align with corporate strategy and the hotel's vision and goals.
- Drive culinary innovation and excellence.
- Train, mentor, and manage the pastry team, fostering a positive and collaborative work environment open to feedback.
- Conduct regular performance reviews and provide ongoing professional leadership.
- Entrust duties and responsibilities to the culinary team, setting clear expectations and checking outcomes.
- Promote and support Rosewood Impacts, the company commitment to sustainable practises and circular hospitality.
- Create and maintain diverse, seasonal, and high-quality menus for events, deli, bars and restaurants.
- Work with the Executive Pastry Chef to create bespoke menus and culinary experiences
- Participates in new menu tastings for guests and management
- Ensure all dishes have standardised recipes with costing, technical sheets, allergen sheets and calory count.
About You
- An existing Pastry and Culinary leader with a passion for excellence.
- Proven experience of designing menus for large scale banquets, reflecting the highest restaurant standard.
- Demonstrates Rosewood’s core values, able to share and express your passion for your industry.
- Demonstrates a commitment to diversity, equity, and inclusion through continuous development, modelling inclusive behaviours.
- A mentor, who is well-organised and structured.
