About the Role


Responsible for the efficient running of all kitchens, ensuring the highest standards of food quality, presentation, and service, while managing, coaching and mentoring a team of culinary professionals. Work closely with other departments contributing to the overall hotel success reflecting Rosewood Hotels and resort Sense of Place philosophy and commitment to excellence and innovation. Alongside key leaders you'll be responsible for all pre-opening curation, planning and execution of the culinary vision for The Chancery Rosewood. 

Key Responsibilities

  • Develop and implement culinary standards that align with corporate strategy and the hotel's vision and goals.
  • Drive culinary innovation and excellence.
  • Develop and implement seasonal culinary standards that align with corporate strategy and the hotel's vision and goals, driving innovation, excellence, and consistency.
  • Collaborate with all departments to ensure a seamless and exceptional dining experience.
  • Establish and oversee the F&B budget in partnership with the Director of Food and Beverage, ensuring all accounts are managed at the approved budgeted level
  • Recruit, train, mentor, and manage the culinary team, fostering a positive and collaborative work environment open to feedback.
  • Conduct regular performance reviews and provide ongoing professional development opportunities by developing a structured succession plan
  • Demonstrate a commitment to diversity, equity, and inclusion through continuous development, modelling inclusive behaviours.
  • Within the scope of your role and team ensure equitable experiences, strengthening inclusion, and promoting a culture of inclusivity and belonging that embraces the contributions of all associates
  • Promote and support Rosewood Impacts, the company commitment to sustainable practises and circular hospitality.
  • Ensure the highest standards of food quality, preparation, and presentation are consistently met.
  • Verify that all F&B company standards have been implemented.
  • Organise and conduct regular kitchen inspections and audits focused on hygiene, health and safety standards and HOH maintenance
  • Lead regular kitchen inspections and audits focused on hygiene, health and safety standards and heart of house maintenance.
  • Adhere to the F&B budget, ensuring all accounts are managed at the approved budgeted level.
  • Be aware of and comply with safe working practices as laid down under the Health and Safety Act as applicable to your place of work. This will include your awareness of any specific hazards within the workplace.

About you


  • Proven experience in managing large kitchen teams across multiple concepts and kitchens.
  • A true passion for excellence
  • Grounded knowledge of the latest food trends and competitors.
  • A proven leader who is people focused and logistically minded
  • Possess excellent strategic planning skills, with an emphasis on delivering, executing, and assessing action plans
  • Preferably you will have had expose of experience of being part of a pre-opening team
  • Demonstrate Rosewoods core values and truly be able to share and express your passion for your industry.
