Essential Duties and Responsibilities
- Report directly to the Assistant Director of Food & Beverage and act as a key operational leader within the F&B division.
- Manage the day‑to‑day operations of MARMO Bistro, ensuring service excellence, operational consistency, and adherence to hotel and brand standards.
- Uphold and execute brand standards and sequence of service components with consistency, precision, and professionalism.
- Provide strong leadership in delivering memorable guest experiences, using guest feedback and performance indicators to drive continuous improvement.
- Oversee outlet financial performance, including budgeting, forecasting, cost control, and achievement of revenue and profitability targets.
- Develop and implement marketing plans and operational initiatives in alignment with the hotel’s overall F&B strategy.
- Lead, motivate, and manage a team of food and beverage professionals, fostering a culture of accountability, learning, and engagement through coaching and counseling.
- Ensure all health, safety, and sanitation standards are fully complied with, maintaining a safe and compliant working environment.
Requirements
- Minimum 5 to 7 years of food and beverage experience, with significant exposure to premium, refined, or bistro‑style dining environments, including at least 2 years in a leadership role.
- Strong appreciation of French bistro service culture, attention to detail, and elevated yet relaxed guest experiences.
- Sound wine knowledge, including familiarity with classic wine regions, food‑and‑wine pairing principles, and the ability to guide guests and coach the service team on wine offerings.
- Demonstrated ability to lead, coach, and develop high‑performing service teams with professionalism and consistency.
