A Day in the Life
As a Sous Chef at Rosewood Amsterdam, your day begins by collaborating with the kitchen team to ensure seamless operations. You’ll oversee your section, ensuring dishes meet the highest standards of quality and presentation, while also contributing to menu development. Throughout the day, you’ll supervise and train culinary associates, monitor inventory, and uphold hygiene standards to deliver exceptional dining experiences. Whether it’s crafting innovative recipes, leading a team, or ensuring a smooth service, your role is integral to the success of the culinary department. At the end of the day, you’ll take pride in creating memorable meals that delight guests.
Job Summary
The Sous Chef is a leader in the kitchen, supporting the Head Chef in managing culinary operations, supervising the team, and contributing to the creation of innovative menus. This role ensures the kitchen operates efficiently while maintaining the highest standards of quality, safety, and guest satisfaction.
Key Responsibilities
Guest Experience:
- Provide courteous and professional service to guests and internal colleagues.
- Handle guest and associate inquiries, ensuring prompt and satisfactory resolutions.
- Collaborate on the creation of dishes and Standard Operating Procedures (SOPs) to enhance guest dining experiences.
- Maintain positive interactions with guests and colleagues, fostering strong relationships.
Operational Excellence:
- Organize and supervise kitchen operations to ensure timely and high-quality food production.
- Ensure dishes are prepared consistently, following recipes and brand standards.
- Assist in menu planning, incorporating fresh, local, and seasonal ingredients.
- Monitor HACCP checklists, enforce sanitation standards, and train associates on food safety protocols.
- Conduct monthly inventory and control food and material stocks to minimize waste.
- Introduce and test new menu items, aligning with market trends and guest preferences.
Finance and Administration:
- Collaborate on innovative recipes to maximize outlet revenues and profitability.
- Analyze food costs, assign prices to menu items, and maintain cost-effective operations.
- Prepare and update departmental operations manuals and other relevant documentation.
Leadership and Collaboration:
- Train and mentor culinary associates, ensuring they develop the skills to excel in their roles.
- Foster a supportive and flexible team environment, focusing on associate growth and success.
- Participate in daily meetings to communicate updates, provide feedback, and ensure smooth operations.
Group Standards:
- Uphold Rosewood’s brand integrity, culture, vision, and mission in all culinary operations.
- Respond to guest feedback and implement changes to exceed expectations.
Skills & Qualifications
Experience:
- Culinary education preferred, with certification as required by local law.
- 3-5 years of culinary supervisory experience in luxury hotels or fine-dining establishments.
Skills:
- Expertise in international and local cuisine, with a creative approach to menu development.
- Strong understanding of food sanitation standards and HACCP regulations.
- Proficiency in standard software applications and hotel systems.
- Excellent organizational and multitasking skills, with the ability to lead and inspire a team.
