THE TEAM

The Hygiene team plays a critical role within the Food & Beverage and Culinary operations, ensuring the highest standards of food safety, hygiene, and sanitation across all outlets.

Working closely with Culinary, Stewarding, Purchasing, and Engineering teams, the function supports a large-scale, multi-outlet resort environment with diverse dining concepts.

YOUR ROLE

As Hygiene Manager, you will lead and oversee all food safety and hygiene operations across the resort. You will ensure full compliance with HACCP standards, local regulations, and brand requirements, while driving a strong food safety culture through training, monitoring, and continuous improvement.

HOW YOU’LL MAKE THE PLACE

Ensure full compliance with HACCP standards and food safety regulations across all F&B operations

Monitor and guide food handlers on proper hygiene and food handling practices

Conduct regular kitchen inspections and implement corrective action plans

Identify risks and implement preventive measures

Lead internal audits and coordinate with external authorities

Conduct vendor inspections with Purchasing and Culinary teams

Oversee cleaning and sanitation programs across F&B areas

Liaise with pest control providers and monitor effectiveness

Handle guest enquiries related to food safety and hygiene

Deliver hygiene and food safety training programs

Maintain documentation and compliance records

COULD THIS BE YOU?

Degree or certification in Food Safety, Hospitality, or related field

Strong knowledge of HACCP and local food safety regulations

Experience in similar role in hotels or large F&B operations

Strong attention to detail and problem-solving skills

Strong communication and stakeholder management skills

Proactive and organized

Good command of English
