- Observing methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
- Maximising the effectiveness of associates by developing each of their skills and abilities through the appropriate training, coaching and mentoring
- Consistently maintains established standards across the department through leading by example and quality control.
- Effectively managing a section and running the service in the absence of the Head Chef and Senior Sous Chef.
- The ability to demonstrate leading and developing people effectively.
- Proven culinary skills in a high volume, upscale brasserie restaurant environment.
- The ability to build strong relationships with the floor team of Holborn Dining Room.
