必須の業務と責任(主要な活動)

  • HACCPベースの食品安全管理システムを導入し、管理する。
  • 衛生プロトコルの遵守を徹底し、全部門で積極的な衛生文化を育成する。
  • 地域の衛生規定を満たすため、食品取扱者のトレーニングプログラムを実施する。
  • 温度管理、原材料検査、保管、調理プロセスを監督する。
  • 害虫駆除の推奨とベンダー保証プログラムを監視し、実施する。
  • 食品安全監査を指揮し、現地当局および第三者監査人と連携する。
  • 食品衛生に関するゲストの苦情を調査し、是正措置を実施する。
  • サンプリングスケジュール、統計レポートを作成し、継続的な改善イニシアチブを推進する。

一般的なスキル

  • HACCP認定の高級ホテルまたはリゾートで同様の職務に最低3年間従事した経験。
  • 日本語を話せる方: 日本語を話す候補者。ただし、英語を話す候補者も考慮する。
  • 外国人候補者: 同様の職務における10年のマネジメント経験、準学士号または学士号を含むビザの要件を満たすこと。
  • 高いコミュニケーション能力、組織力、分析力。
  • 食品衛生(HACCP)資格必須。

Job Summary
Rosewood Miyakojima is seeking a dedicated Hygiene Manager to uphold the highest standards of sanitation and food safety across our luxury resort. This role ensures that all food served meets stringent hygiene requirements and complies with HACCP standards, local regulations, and Rosewood’s commitment to excellence.


Essential Duties and Responsibilities

  • Implement and manage a fully operational HACCP-based Food Safety Management System.
  • Foster a positive hygiene culture across all departments, ensuring compliance with sanitation protocols.
  • Conduct training programs for food handlers to meet local hygiene regulations.
  • Oversee temperature control, raw material inspections, storage, and food preparation processes.
  • Monitor and implement pest control recommendations and vendor assurance programs.
  • Lead food safety audits and liaise with local authorities and third-party auditors.
  • Investigate guest complaints related to food hygiene and implement corrective actions.
  • Prepare sampling schedules, statistical reports, and drive continuous improvement initiatives.

Required Skills – General skills:

  • Minimum three years of experience in a similar role in a HACCP-certified luxury hotel or resort.
  • Preferred: Japanese-speaking candidates; however, English-speaking candidates will be considered.
  • Foreign candidates: Must meet visa requirements, including 10 years of management experience in a similar role and an Associate or Bachelor’s degree.
  • Strong communication, organizational, and analytical skills.
  • Food Hygiene (HACCP) certification is required.

Beyond the resort, guests will discover an abundance of vividly picturesque sites, from the majestic natural stone arch of nearby Sunayama beach to the perfectly poised lighthouse at Higashi-Hennazaki Cape (a nationally designated “Place of Scenic Beauty”) and the seven-kilometer stretch of Yonaha Maehama, regularly ranked as Japan’s best beach and renowned for its cinematic sunsets.
