The Restaurant Manager will oversee all meal periods in Dowling’s at The Carlyle and The Gallery. The manager is responsible for the delivery of high service standards, maintaining quality equipment, par levels, product presentation and training, and may be asked to support other Food & Beverage operational areas as business requires. A vital aspect of this position is to lead, create, and support the Food & Beverage platform, while building enthusiasm and passion amongst all team members.


Ensures the delivery of great product experience occurs for Breakfast, Lunch, Afternoon Tea, Dinner, and Promotions through educate the team members of current standard operating procedures.

Maintain complete knowledge of food and beverage products and comply with all departmental policies/service procedures/standards.

Ensures that all food and beverage facilities and equipment are cleaned, and properly stocked according to anticipated business volume.  Notify engineering / housekeeping immediately of any maintenance and repair needs.

Provide training and development opportunities to enhance the skills and capabilities of the Restaurant team and Gallery Team, assuring staff is properly and thoroughly trained.

Provides mentoring, coaching and regular feedback to help manage conflict and improve team member performance. 

Provide feedback to staff on their performance.  Handle disciplinary problems and counsel employees according to standards.

Ensure that staff report to work as scheduled.  Document any late or absent employees.

Assign work, breaks, and side duties to staff. Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations which compromise the department's standards and delegate these tasks.

Monitor guest and resident reactions and confer frequently with service staff to ensure guest and resident satisfaction.
Efficiently manage guest’s complaints, queries, and feedback to ensure a positive outcome.

Maintain complete knowledge of:
  • All liquor brands, beers, and non-alcoholic selections available within Dowling’s Restaurant and the Gallery. 
  • The characteristics and description of every wine/champagne by the glass and major wines on the wine list.
  • Designated glassware and garnishes for drinks.
  • All menu items, preparation method/time, ingredients, sauces, portion size, garnishes, presentation, and prices.
  • Daily menu specials.
  • Dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
  • P.O.S. and manual system procedures.
  • Daily house count, arrivals/departures, V.I.P.’s.
  • Scheduled in-house group activities, locations, and times.
  • Strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons, and drunk driving.


Qualifications –

Bachelor’s degree in hospitality management or other related fields.

3 years’ experience in luxury restaurant operation.

Prior heavy exposure to fine dining or Michelin Star rated restaurants in the Manager or Assistant Manager capacity.

Computer literate and proficient in Micros, Infogenesis & Microsoft office.


Experience –


Minimum 3 years of experience in a luxury or ultra-luxury property, with at least 2 of those years in a high-end restaurant or 1 Michelin Star restaurant.


Compensation: $80,000-82,000 annually
