The Chancery Rosewood, a Rosewood Hotel Group property, is housed in the iconic former U.S. Embassy on Grosvenor Square, reimagined by British architect Sir David Chipperfield. It includes 144 spacious suites designed by Joseph Dirand, alongside a collection of distinctive dining and entertainment spaces, providing a stage for progressive ideas, voices and expression.
We are seeking an exceptional Head Sushi Chef to lead our sushi programme within Tobi Masa, Chef Masayoshi Takayama’s new home in Mayfair. Meaning “to fly”, Tobi showcases a philosophy of freedom and creativity from the culinary master behind Masa, Bar Masa and Kappo Masa in New York City.
This is a pivotal role for a chef who demonstrates an uncompromising commitment to precision, seasonality, and the integrity of Japanese culinary tradition. Working in close partnership with the Chef de Cuisine, you will define and deliver a sushi offering that is both technically masterful and quietly innovative, creating a guest experience that is elegant, immersive, and memorable.
You will set the tone for excellence across the kitchen — leading with calmness and respect, refining every detail, and ensuring that each dish reflects the highest standards of craftsmanship and restraint. This role is suited to a chef who understands that true luxury lies in subtlety, consistency, and the pursuit of perfection.
Key Responsibilities:
- Take full ownership of the sushi programme, ensuring an exceptional standard of quality, consistency, and presentation at all times.
- Execute and oversee sushi preparation with absolute precision, showcasing refined knife skills and a deep respect for traditional techniques.
- Curate and evolve menus in collaboration with the Chef de Cuisine, incorporating seasonality, premium sourcing, and thoughtful innovation.
- Build, mentor, and lead a high-performing team, instilling a culture of discipline, attention to detail, and quiet excellence.
- Maintain an immaculate kitchen environment, ensuring rigorous adherence to HACCP and the highest standards of hygiene and organisation.
- Oversee service with composure and control, delivering a seamless and elevated dining experience.
- Establish and maintain relationships with trusted suppliers, ensuring the sourcing of exceptional, sustainable ingredients.
About You:
- You are an accomplished Head Sushi Chef with experience in luxury or Michelin-starred environments, with leadership experience preferred.
- You possess a deep understanding of expert knife skills, traditional Japanese techniques, fish sourcing, seasonality, and quality assessment, paired with a refined and contemporary sensibility.
- You lead with confidence and discretion, setting exacting standards while nurturing talent within your team.
- You have an exceptional appreciation for detail, balance, and presentation, with a commitment to consistency at the highest level.
- You possess strong leadership and team management skills.
- You are passionate about provenance, sustainability, and the respectful use of premium ingredients.
