Job Summary

Responsible for all bars/beverage operations within Rosewood Doha. The role involves assistance with promoting the lounge, menu planning, maintaining standards, assisting servers on the floor during peak periods and managing property liquor inventories and controlling. Strives to ensure guest and associate satisfaction while maintaining the operating budget. Accountable for enforcing all legal obligations professionally and consistently. Determines training needed to accomplish goals, then implements plan. Strengthens the food and beverage team by assisting in other outlets when needed.

Essential Duties and Responsibilities

Guest Satisfaction
• Ensures that all associates deliver the brand promise and provide exceptional guest service at all times.
• Ensures that associates also provide excellent service to associates in other divisions as appropriate.
• Spends time in public areas observing associate-guest interaction and talking with guests, works through Department Heads to coach associates in guest service skills as necessary.
• Ensures that all guest and associate complaints are resolved in a quick and efficient manner.
• Maintains positive guest and colleague interactions with good working relationships.
• Implements agreed upon beverage policy and procedures throughout the property.

Finance / Administration
• Understands beverage control including days on hand, perpetual inventory, bar pars, portion control, costs controls, beverage potentials, mix of sales analysis for beverage, issue & returns, food standards, end period and inventory.
• Ensures that each profit center (e.g. Outlet, Bar, Events) is operated in line with maximizing profit while delivering on the brand promise.
• Ensures that each cost center operates with the lowest possible cost structure while also delivering on the brand promise to the guest.
• Comprehends budgets, operating statements, and payroll progress reports as needed to assist in the financial management of department.
• Participates in the management of department's controllable expenses to achieve or exceed budgeted goals.
• Manages to achieve or exceed budgeted goals by implementation of strategic beverage promotion.
• Assists in the monthly re-forecast.
• Manages beverage costs proactively based on key performance indicators, works with the respective Department Heads as appropriate.
• Ensures that all hotel, company and local rules, policies and regulations relating to financial record keeping, money handling and licensing are adhered to.
• Responsible for control of beverage program including recipes, inventory, and progressive menu development.
• Oversees the preparation, reviews, and updates individual Departmental Operations Manuals.
• Manage incentive programs for upselling and marketing promotions.

Marketing
• Evaluates local, national, and international market trends, vendors and other hotel/restaurant operations constantly to make sure that the hotel’s operations remain competitive and cutting edge.
• Assist on the Marketing and Public Relations opportunities to increase awareness and ultimately business.
• Ensures that the Beverage activities are aligned with the respective Corporate Strategy, and that the Hotel actions have been implemented where appropriate.
• Assists with developing menus and promotions as necessary.

Operations
• Ensures that all company minimum brand standards have been implemented, and that optional brand standards have been implemented where appropriate.
• Monitors all operations, especially during peak business periods, working through the respective Department Head to make adjustments where necessary.
• Ensures that all Beverage Fundamentals are introduced, implemented, and consistently maintained.
• Ensures that Food and Beverage associates work in a supportive and flexible manner with other departments, in the spirit of “We work through Teams”.
• Ensures that all associates are up to date with the availability of seasonal and new products on the market.
• Responds effectively to guest problems and complaints.
• Empowers associates to provide excellent customer service.
• Emphasizes guest satisfaction during all departmental meetings and focuses on continuous improvement.
• Provides feedback to individuals in an effort to improve service performance.
• Tastes and monitors the beverage products served throughout the operation, provides feedback where appropriate.
• Maintains and assists in outlets during the operation.
• Communicates critical information to the Bar/Lounge associate regarding each event.
• Conducts daily briefings and bi-weekly meetings to align standards and expectations.
• Interacts with guests to obtain feedback on product quality and service levels.
• Reviews comment cards and guest satisfaction results with associates.
• To maintain and comply with Forbes, RW Brand and LQA standards.
• To continuously support direct supervisor assuring service complies with Forbes, RW Brand and LQA standards. To assure the knowledge of Forbes, RW Brand and LQA standards.
• Monitors adherence to all liquor control policies and procedures.
• Maintains food handling and sanitation standards.
• Ensures compliance with all Bar/Lounge policies, standards, and procedures.
• Manages in compliance with all local, state, and federal beverage and liquor laws.
• Trains associate on liquor control policies and procedures and prepares the team for competition.
• Run and interpret department reports as necessary.
• To have a positive impact, taking personal responsibility and initiative to resolve issues, always clearly communicating with both guests and associate.
• To have a full knowledge of spirits, beers, wines, alcoholic and nonalcoholic beverages.
• To have a full knowledge of bar OS&E and drinks garnishes.
• To have a full knowledge of the menu, preparation methods, presentations, items characteristics and prices
• Ensure that to know the daily occupancy rate of the hotel, the number of arrivals and departures, SAGs guests.
• Be familiar with all the services/characteristics and sites of interest/activities in the neighborhood, current or upcoming events in Doha (festivals, cultural events) to answer precisely to guest requests.
