The Chancery Rosewood—opening in Summer 2025, a Rosewood Hotel Group property—is housed in the iconic former U.S. Embassy on Grosvenor Square, reimagined by British architect Sir David Chipperfield. It will include 144 spacious suites designed by Joseph Dirand, alongside a variety of dining and entertainment spaces: providing a stage for progressive ideas, voices, and expression.
Here, we are looking for a Chef de Cuisine to lead the kitchen for our Mediterranean all-day dining and in-room dining restaurants. This is a role for someone who combines culinary expertise with leadership, ensuring the highest standards in food quality, service, and team development. You’ll work with precision, bringing a deep understanding of Southern Italian, Greek, and Levantine cuisines to the forefront while fostering an organised and collaborative kitchen culture.
Key Responsibilities
- Define and elevate the culinary experience. Develop and implement seasonal menus that align with the hotel’s vision and standards.
- Ensure consistency and accuracy. Standardise recipes with detailed costings, technical sheets, allergen information, and calorie counts where required.
- Lead and mentor the team. Train, manage, and develop a team of 20+ chefs, ensuring structure, organisation, and professional growth.
- Uphold the highest hygiene standards. Implement and maintain HACCP protocols and oversee regular health and safety audits.
- Drive sustainability initiatives. Actively promote Rosewood Impacts, supporting sustainable practices and circular hospitality.
- Work efficiently within budgets. Maintain financial control over food costs and ensure alignment with the F&B budget.
- Maintain kitchen operations and compliance. Oversee kitchen inspections, heart-of-house maintenance, and operational excellence.
- Foster a culture of respect and collaboration. Encourage open communication, problem-solving, and a positive team environment.
About You
- Proven leadership. Minimum five years as a Senior Sous Chef or Head Chef, ideally within a pre-opening team.
- Well-versed in Mediterranean cuisine. A strong foundation in Southern Italian, Greek, and Levantine cooking techniques and flavors.
- Detail-focused and structured. Experience managing a well-organised kitchen with 20+ chefs.
- Ingredient-driven. You believe the best dishes start with the best ingredients.
- Collaborative and solutions-focused. You handle challenges with composure and problem-solve efficiently.
