THE TEAM
The Culinary team supports a dynamic multi-outlet operation featuring diverse concepts such as Pan-Asian, Indo‑Arabic, Italian, Vietnamese seafood, and casual dining venues. Among these, LUA – Grill & Bar is a signature outlet specializing in Italian cuisine, offering a vibrant, modern dining experience.
The team works collaboratively across restaurants, in-villa dining (24-hour service), and large-scale events, ensuring consistency, creativity, and excellence across all touchpoints.
YOUR ROLE
As Sous Chef – Western Cuisine (LUA – Grill & Bar), you will support the Executive Chef in managing kitchen operations for LUA, focusing on high-quality Italian and Western cuisine.
You will lead daily operations in a fast-paced, high-volume restaurant environment, ensuring the delivery of authentic flavors, consistent presentation, and exceptional guest experiences aligned with the concept of a modern Italian grill.
HOW YOU’LL MAKE THE PLACE
- Oversee daily kitchen operations at LUA – Grill & Bar (Italian Cuisine)
- Ensure authentic preparation and presentation of Italian and Western dishes to brand standards
- Supervise, train, and motivate the kitchen team to deliver consistent, high-quality output
- Support menu execution and seasonal updates aligned with LUA’s Italian grill concept
- Maintain strict HACCP, hygiene, and food safety standards
- Manage food cost, portion control, and kitchen efficiency
- Collaborate with other outlets and central kitchen for smooth operations
- Support culinary delivery for in-villa dining and large-scale events when required
- Monitor inventory, supplier quality, and product consistency
COULD THIS BE YOU?
- Strong expertise in Italian cuisine and Western grill techniques
- Proven experience as Sous Chef or similar role in high-end restaurants, hotels, or resorts
- Experience working in concept-driven restaurants (Italian grill or casual fine dining preferred)
- Strong leadership and team management skills
- Knowledge of food safety, cost control, and kitchen operations
- Ability to work in a high-volume, multi-outlet luxury resort environment
- Detail-oriented with a passion for authentic cuisine and guest experience
- Experience in Southeast Asia or resort operations is an advantage
